Roasted Garlic Aioli Sauce

Easy, creamy, garlic and lemon sauce that is wonderful as a dressing in salads, on sandwiches, and as a dip with veggies, fish, chicken, or beef.


Ingredients

  • Whole garlic bulb(s) (about 8 cloves, use as many bulbs as are needed)

  • Olive oil (drizzle)

  • 1 cup high-quality mayonnaise

  • Lemon juice to taste (freshly squeezed)

  • Salt and pepper (to taste)


Instructions

  1. Preheat oven to 400. Cut off the top of the garlic bulb(s), about a half inch down, so you just see the top of the cloves. Place on a sheet of aluminum foil, drizzle with olive oil. Wrap the the foil around the bulb, and bake for about 30 minutes, until cloves are soft and tender.

  2. Once the garlic is cool enough to handle, separate the cloves, turn upside down and squeeze out the garlic goodness into a small bowl. Mash with a fork or pestle.

  3. To that same bowl add the mayonnaise, lemon juice, salt & pepper. Start with half a lemon, juiced, and a pinch each of salt & pepper. Give it a taste and add more as desired.

  4. Cover, put in the fridge, and let the flavors meld for at least 30 minutes. Stores up to 10 days.


Add in any fresh herbs you desire!

Great on sandwiches, as a creamy dressing for salads (just thin with a little water until you reach your desired consistency), and as a dip / sauce for veggies, fish, chicken, or beef.
